If it’s not obvious, we love pasta and Parmigiano. Also, garlic goes into most of our dishes, and it’s something we never run out of in the kitchen. I pick up garlic on every grocery trip, that’s how much we use it. Don’t ever use the jar or powdered garlic, it’s just not the same. Grilled chicken is great in this recipe and we make it with or without it. It’s just personal preference. 

Ingredients:

  • 1 pound of cooked pasta. I use whatever pasta is available. 
  • 4 tbsp butter (or vegan butter)
  • 1 head of garlic (about 24 cloves)
  • 2 tbsp oyster sauce
  • 4 tsp soy sauce
  • 4 tsp fish sauce (vegan fish sauce is available)
  • Thinly sliced scallions
  • 2 ounces parmigiano-reggiano (can use vegan parm)
  • Grilled chicken (optional)

Directions:

Boil Water

Peel garlic. Chop scallions.

Add pasta to boiling water.

Add butter to the wok and saute garlic until fragrant.

Add oyster sauce, fish sauce, soy sauce. Saute for about 2 minutes.

Once pasta cooks, use some tongs and add pasta to the mixture along with whatever water that drips off the pasta. reserve pasta water (you may need some if the pasta is too dry).

Toss with Parmigiano. Add grilled chicken if using.

Garnish with additional Parmigiano and scallions.
