Aside from pasta, I’m here all day for tacos. A particular favorite of mine is this very simple shrimp taco with cilantro lime sour cream. Very little prep time. This could also add tomatos, salasa, or whatever else you may like. I prefer it very simple. It’s light on the stomach and not bloating. Add your favorite side dish…I use rice, obviously. I also never intended to use this picture but it turned out ok. Real life.
Ingredients:
Shrimp Marinade
- 1-1.25 lbs peeled shrimp
- 4 cloves of garlic
- 1 tbsp cumin
- 1 tbsp lime
Cilantro Lime Sour Cream:
- 1/4 cup cour creap
- zest of 1 lime
- Juice of 1 lime
- 2-3 tbsp Cilantro chopped
- 2 tsp cumin
Extras:
- Flour or corn tortillas
- 1-2 avocados
- Shredded lettuce
- Whatever else you’d like
Directions:
Marinade: Mix all ingredients together. Cutting up shrimp for easier pan cooking is optional. Marinade for at least 30 minutes.
Cilantro Lime Cour Cream: Mix it all up in no particular order. Let sit to marry together for about 30 minutes.
Cook Shrimp. Once the shrimp is cooked…assemble tacos accordingly.
