Pecan Pie - Misty Neece

Finally, I found the recipe my grandmother used throughout my childhood…written on a small State Farm notepad titled “John’s Favorite Pecan Pie Recipe”. 

Ingredients:

  • 1 10 inch unbaked pie crust
  • 3 eggs
  • 3/4 cup brown sugar
  • 1 cup corn syrup (Karo)
  • 2 tbsp unsalted butter (melted and cooled) – can also use vegan butter to make a vegan, dairy-free pie.
  • 1 and 1/2 tsp vanilla extract
  • 1 and 1/4 cup pecans

Directions:

Preheat oven to 350. 

Beat eggs slightly to combine yolks and whites.

 Add corn syrup and sugar. Mix. 

 Add butter to the egg, sugar and syrup mix. 

 Stir in vanilla and pecans until blended.

 

Bake at 350 for 50 minutes or until set.
